Fried Fish with Ginger And Spring Onion
Ingredients (A)
300gm fillet of Garoupa, sliced.
50gm young ginger slices.
50gm spring onion cut into 4cm.
5 cups Neptune cooking oil.
3 cloves garlic, finely chopped. |
Marinade for Prawns (B)
1/2 tsp concentrated chicken stock
1/8 tsp pepper
1 tsp cooking wine(Chew Heng Wine)
1 tbsp egg white
1 tbsp corn flour
1/2 tsp sesame oil |

Seasoning
(C)
2 tbsp water
1/2 tsp oyster sauce
1tsp cooking wine (Chew Heng Wine)
Method
1. Marinate the fish with (B) and set aside.
2. Heat up Neptune cooking oil and fry the marinated fish
until golden brown and set aside.
3. Fry ginger and spring onion for 10sec and set aside.
4. Saute chopped garlic in 1/2 tbsp Neptune cooking oil until
fragrant. Add the fried fish, ginger, spring onion and seasoning
(C), stir well, cook till gravy has thickened and serve hot.

Spicy Roast Chicken
Ingredients (A)
One Chicken, cleaned, cut into half.
250ml thick coconut milk and
500ml thin coconut milk from 1 1/2 coconut.
2 stalks serai bruised.
2 daun limau purut.
4 tbsp Neptune cooking oil.
Salt and sugar to taste. |

10 red chillies
15 dried chillies
10 cloves garlic
1 tbsp ketumbar
1 tsp pepper corns
1 1/2cm thick kunyit
3/4cm thick lengkuas
5 buah keras |
Glazing
(mixed) (C)
3 tbsp
sweet soya sauce
3 tbsp Neptune cooking oil
Method
1. Heat
up oil and stir fry spices (B), serai, daun limau purut till fragrant.
Add chicken and stir till well coated with the spices.
2. Pour in thin coconut milk, boil till chicken is half cooked before
adding in thick coconut milk.Continue to cook till chicken is tender.
Dish up and leave to cool.
3. Heat up grill to 250ºC. Arrange chicken on baking tray, glaze
it with (C) and grill till golden brown, Remove and serve hot. |
